sunshine eggnog

gluten + refined sugar + dairy free
serves: 4
ingredients:
4 pastured egg yolks (we used Sunworks Farm
1/2 c coconut sugar/ turbinado cane/ honey
2.5 c unsweetened vanilla almond mylk ( sub milk alternative of choice)
1 can full fat coconut milk
2 tsps pure organic vanilla extract
5 tsps sunshine potion* by The Gut Lab
biiiig pinch of nutmeg + cinnamon to sprinkle when serving
(adult version: add dark or spiced rum)
method:
1. separate + keep yolks + place in medium bowl
2. add remaining ingredients to the stove top + whisk until warm + sugar is dissolved
3. very slowly drizzle 1 cup of the warm liquid into the yolks - whisking together like a mad person
4. pour everything into the sauce pan, turn the heat up to medium + continue to whisk madly for 4-5 minutes
5. pour into a large mason jar + store in the fridge until chilled, or drink straight away warm!
6. serve in your fav glasses + sprinkle with lots of nutmeg + cinnamon
