raw cosmic fudge pie

{topped with toasted lucuma pecans + shredded coconut}

vegan + refined sugar / gluten / grain free

for the fudge:

5 medium sized medjool dates pitted

1 can full fat coconut cream (place can in the fridge overnight, for this recipe use just the cream, save the liquid for smoothies!)

1/4 cup coconut oil - room temp

1/2-3/4 cup cosmic hot cacao by The Gut Lab

1.5 Tbsps reishi lab essential by The Gut Lab

2 Tbsps lucuma lab essential by The Gut Lab

3 Tbsps pure organic maple syrup

pinch of himalayan salt

2 tsps pure organic vanilla extract

for the topping:

1/2 cup chopped pecans

1/2 cup unsweetened shredded coconut

3 Tbsps maple syrup

2 Tbsp lucuma lab essential by The Gut Lab

1. add all your fudge ingredients to a food processor + blend until smooth. scrape down sides occasionally + add 1-2tsp of the left over coconut liquid if needed to move it along- careful not to add too much! add more cosmic hot cacao if you like it super chocolatey!

2. line a medium sized dish or pie plate with parchment paper + pour your fudge pie “batter” in.

3. toast your pecans + shredded coconut in a toaster oven or on low heat in the oven until lightly golden brown + fragrant. 

4. stir in lucuma, maple syrup + salt to your topping. taste + add more maple or lucuma as desired.

5. distribute your topping evenly over your cosmic fudge pie + put in the freezer until set- at least 1-2 hrs.

6. transfer + store in the fridge + cut in to squares or pie shaped slices before serving.

7. enjoy with loved ones!
